This week on Three Kitchens Podcast, Heather makes savoury Vietnamese crispy crêpes, Bánh Xèo.

This super simple recipe makes a really yummy, and beautiful meal. We filled ours with pork, shrimp, onion and bean sprouts. Mix up your fillings, add fresh greens (mint is a must) and a dipping sauce made to your liking.

This crêpe is made with both rice flour and all purpose flour, plus coconut creme and turmeric to give it that beautiful golden colour.  It takes a little practice to get the hang of making the crêpes perfectly thin and crispy, but there's lots of batter to play with. And even if it doesn't look perfect, we guarantee it'll still be tasty. 

Voila! Bánh Xèo is fresh, healthy and damn delicious.
